Our Maine Lobster Claw & Knuckle Meat comes from a state-of-the-art, High Pressure Processing facility, that helps retain the same sweet flavor, texture and taste of the Lobster from the day it was harvested. HPP also allows for 100% separation of meat from the shell & ensures food safety by destroying food-borne pathogens.
So... how does HPP work?
HPP is a non-thermal technology that uses cold water and extreme high pressure, about five times more pressure than found at the bottom of the ocean.
Live fresh lobsters are placed into containers, which are then pushed into the HPP unit for about 2 minutes.
The high-water pressure breaks the connective tissue that bonds the meat to the shells and allows for the meat to be easily recovered.
Since no heat is involved, the innate flavor, texture and nutritional properties of the lobsters are preserved. This allows for a fresh, out of the ocean, all-natural tasting experience.
